  1. Peel and cut

Trim the leeks by removing the outer leaves and the dirty root end. Slice them into 1 cm rounds. Peel the potatoes and cut them into 2 cm cubes.

Tip · To keep the leeks from sticking to the saucepan, stir them often in the first cooking step.
  2. Cook the leeks

Heat the oil in the saucepan over medium heat. Add the leeks and cook for 3 min, stirring with the wooden spoon.

  3. Add the potatoes

Add the potatoes to the saucepan with the leeks. Add 50 cl of water, add a pinch of salt and bring to a boil.

  4. Cook the soup

Lower the heat to keep a gentle boil. Cook for 15 min, until the potatoes are tender.

  5. Blend the soup

Drain off a little liquid if needed, then blend the soup until smooth. Add the milk and stir well. Taste and adjust the salt and pepper if needed.

Tip · If the soup is too thick, add a little hot water to loosen it.
  6. Toast the bread

Toast the bread slices in the nonstick skillet over medium heat until golden on both sides.

  7. Melt the cheese on the toasts

Sprinkle each toast with the grated cheese (20 g per person). Slide them under the oven broiler, or into the covered skillet, for 2 min to melt the cheese.

And there you go, it's readyCheck off every step to celebrate.
