Step-by-step recipe

  1. Prep the veggies

Peel and thinly slice the onion, then crush the garlic clove. Open the cans, then drain and rinse the kidney beans and corn in the colander.

  2. Cook the onion

Heat the olive oil over medium heat in the sauté pan, then add the onion with a pinch of salt. Cook it, stirring, until it turns translucent.

  3. Add the garlic and chili powder

Add the garlic and chili powder, then stir for 30 seconds to wake up the flavors without burning the garlic.

  4. Pour in the tomatoes

Pour in the crushed tomatoes, season with salt and pepper and stir. Bring to a simmer.

  5. Add the beans and corn

Put half the drained kidney beans in the sauté pan, about 240 g, plus all the corn. Save the other half of the beans for another meal.

Tip · An 800 g can is too much for 2: only add half the drained beans, about 240 g, and keep the rest in the fridge for 2 to 3 days in a closed container.
  6. Simmer the chili

Let it simmer over low heat, uncovered, stirring now and then. If the chili gets too thick, add a small glass of water.

  7. Cook the couscous

Meanwhile, bring 200 ml of salted water to a boil in the saucepan. Turn off the heat, pour in the 130 g of couscous, cover and let it swell for 5 min, then fluff it with a fork.

Tip · Don't stir the couscous while it swells under the lid, then fluff it with a fork so it doesn't clump.
  8. Taste and serve

Taste the chili and adjust the salt and pepper. Serve it over the couscous.

And there you go, it's readyCheck off every step to celebrate.
