Turn the oven to 200 °C, convection if you have it, and line the baking sheet with parchment paper.
Cut the sweet potatoes
Wash the 600 g of sweet potatoes, then cut them into 2 cm cubes, skin on. Put them in the mixing bowl with half the olive oil, salt and pepper.
Season the chicken
Pat the 4 thighs dry with paper towels. Rub them with the rest of the oil, the thyme, garlic powder, salt and pepper.
Roast the sweet potatoes and chicken
Spread the sweet potatoes on the sheet and set the chicken thighs skin side up between the cubes, not too tight. Slide it all onto the middle rack.
Tip · Don't crowd the sheet, or the sweet potatoes steam and won't brown. If it's too tight, put them on one side and the chicken on the other.
Roast and flip
Roast for 35 min at 200 °C. Halfway through, flip the sweet potatoes with a spatula, leaving the chicken skin side up. The chicken is done when the juices run clear and the center hits 74 °C.
Tip · Poke the thigh at its thickest point, near the bone. If the juices are pink, give it 5 more min in the oven.
Cook the green beans
During the last 15 minutes in the oven, trim the 400 g of green beans and drop them into a saucepan of salted boiling water. Cook them for 8 to 10 min, then drain.
Sauté the beans in butter
Melt the 20 g of butter in the skillet over medium heat. Add the drained beans, season with salt and pepper, and sauté for 3 min.
Serve
Take the sheet out of the oven and let the chicken rest 3 min. Plate the thighs with the sweet potatoes and buttery green beans.
And there you go, it's readyCheck off every step to celebrate.
