Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 200 °C, convection if you have it.

  2. Cook the pasta

Bring a saucepan of water to a boil with the pinch of salt, then cook the 170 g of elbow pasta for 8 min, a little less than the package says. Drain it in the colander.

Tip · Keep the pasta a little firm, it finishes cooking in the oven. Serve the gratin with a green salad.
  3. Prep the mushrooms and ham

Wipe the mushrooms with a damp towel, slice them, then cut the ham into small squares.

  4. Sauté the mushrooms

Melt the 5 g of butter in the skillet over medium-high heat, add the mushrooms and brown them for 6 to 7 min, stirring. Add the ham for the last 1 to 2 minutes.

Tip · Don't stir the mushrooms right away, let them brown for 2 to 3 min first. They'll release their water and then turn golden, without boiling.
  5. Make the sauce

In the bowl, mix the 7 cl of crème fraîche, the 3 cl of milk, the pinch of nutmeg and the pepper. Pour the sauce over the mushrooms and ham, then stir it in off the heat.

  6. Assemble the gratin

Toss the drained pasta with the mixture, then pour it all into the baking dish. Sprinkle with the 35 g of shredded cheese.

  7. Bake until golden

Bake the dish at 200 °C until the top is nicely golden and it's bubbling around the edges. Let it rest 2 min before serving.

And there you go, it's readyCheck off every step to celebrate.
