The appetizers are put together cold: salmon toasts, mini skewers and olives. The homemade salmon gravlax cures for two days in the fridge and gets sliced at the last minute, "wow" effect guaranteed. The beef and porcini stew cooks the day before in a Dutch oven: it's even better reheated.
