A real Christmas dinner without spending the day in the kitchen: lots of assembling, a single dish in the oven, and the chocolate mousse made the day before.
Easy on the day
You want a Christmas with style, but you have neither the time nor the wish to cook for three days? This menu is for you. The appetizers come together in a quarter of an hour: olives and tapenade, blinis with tarama, mini tomato, mozzarella and basil skewers.
The foie gras comes ready-made with toasted gingerbread and fig chutney: just slice it. The salmon en croûte with beurre blanc is the only dish that goes in the oven, and it impresses far more than it takes effort.
The cheese board comes together at the cheese shop, and the chocolate mousse with candied clementines is made the evening before. On the day, you have time to set the table, get changed, and even enjoy your guests.

Before the party: 27 min of cooking. The big day: 2 hr 20 min of cooking, and the oven runs for 50 min.
Do the "buy now" shopping (pantry, canned goods, drinks)
Do the fresh shopping
Move the foie gras from the freezer to the fridge, if it was in there
Make the chocolate mousse and chill it overnight
Put the salmon en croûte together, keep it in the fridge
Take the cheeses out of the fridge (they should be at room temperature)
Put the mini skewers together and keep them in the fridge
Spread the blinis with taramasalata and lumpfish roe
Pour the olives and the tapenade into little bowls
Preheat the oven to 200 °C
Serving: appetizers
Put the salmon en croûte in the oven (35 min at 200 °C)
Take the foie gras out of the fridge
Toast the gingerbread and plate the foie gras
Time to sit down: the starter
Whisk up the beurre blanc
Serving: main
Serving: cheese
Serving: dessert
About $115 in groceries for 6 guests, so around $19.17 per person, from appetizers to dessert. That's an estimate based on average supermarket prices.
Your store and your brands will move the total, but that's the ballpark.
The day before or earlier: foie gras, toasted gingerbread and fig chutney and chocolate mousse with candied clementines, so 27 min in the kitchen before the party. On the big day, you get to breathe.
The oven runs for 50 min on the big day, and never two dishes at once at different temperatures: one oven is plenty.
Dinner's served at 8:15 PM. The timers in the plan tell you when to take each dish out.
With drinks: Olives, tapenade and breadsticks; Blinis, taramasalata and lumpfish roe; Mini cherry tomato, mozzarella and basil skewers. To start: Foie gras, toasted gingerbread and fig chutney. For the main: Salmon en croûte with beurre blanc. For the cheese course: Cheese board. For dessert: Chocolate mousse with candied clementines.
For 6 guests, the big picture: half-cooked foie gras (300 g), salmon fillet (900 g), Brie de Meaux (140 g) and dark chocolate (210 g). The full grocery list, aisle by aisle, is right above.
In two trips. Three days before, the stuff that keeps (17 items: produce, meat and seafood, dairy and pantry). Then the day before, the fresh stuff (12 items, like salmon fillet, taramasalata and mini mozzarella balls). You'll dodge the last-minute crowds.
To sit down at 8:15 PM, the first step of the big day starts at 5:45 PM: put the salmon en croûte together, keep it in the fridge. The main (salmon en croûte with beurre blanc) goes in the oven at 7:25 PM. Every step of the game plan is timed backward from when you sit down to eat.
This menu is pork-free. It's not vegetarian: for a meat-free table, there's a full vegetarian menu. A kid counts as half a serving in the quantities.
