  1. Prep the veggies

    Thinly slice the onion and garlic. Cut the sun-dried tomatoes into strips.

  2. Heat the water

    Fill one saucepan with 1.5 L of water and the pinch of salt for the pasta, and another saucepan with 50 cl of unsalted water for the lentils. Bring both to a boil over high heat.

  3. Cook the red lentils

    Pour the 90 g of lentils into the small saucepan and turn it down to a simmer. Let them cook 8 to 10 min without stirring, then drain them gently.

  4. Cook the whole wheat pasta

    Drop the 150 g of pasta into the salted boiling water at the same time as the lentils. Cook 10 to 12 min according to the package, and save a glass of pasta water before draining.

  5. Sauté the onion and garlic

    Heat the 3 cl of olive oil in the skillet over medium heat. Add the onion and cook it 5 min, then the garlic and sun-dried tomatoes for 2 min.

  6. Add the lentils

    Add the drained lentils to the skillet with the oregano and pepper. Stir gently for 2 min so you don't mash them.

  7. Put it together and serve

    Add the drained pasta to the skillet with a little pasta water and toss 1 min. Grate the 25 g of Parmesan over the top and serve right away.
