Wash the potatoes under cold water, then peel them with a knife. Cut them into pieces of the same size so they cook evenly.
Put the potato pieces in the saucepan with cold salted water. Bring to a boil, then lower the heat and let them cook for 20 to 25 min until tender.
Peel the carrots with a knife on the cutting board. Cut them into thick 1 cm rounds so they don't fall apart.
In the same saucepan as the potatoes (don't drain the water), add the carrot rounds. Let them cook for 10 to 12 min over medium heat until tender but still firm.
Tip the potatoes and carrots into the colander to drain. Keep the cooking water in the saucepan.
Put the potatoes and carrots back in the hot saucepan. Add the milk, half of the butter and a pinch of salt. Mash everything with a fork until smooth.
In the skillet, heat the oil over medium heat. Add the sausages and brown them for 3 to 4 min on each side until nicely colored.
Divide the mash among the plates, set the sausages on top and add the carrots around them. Drizzle with the rest of the butter, melted, and add plenty of pepper.
