Step-by-step recipe

  1. Start the rice

    Put 160 g of basmati rice in the saucepan with 320 ml of water and a pinch of salt. Bring to a boil, cover, turn down to very low and cook for 12 minutes.

  2. Prep the veggies

    Peel and slice the onion. Cut the red bell pepper into small cubes. Drain and rinse the kidney beans and corn in the colander.

  3. Cook the onion and bell pepper

    Heat 1 tbsp of olive oil over medium heat in the sauté pan. Add the onion and bell pepper and cook them for 5 minutes, stirring.

  4. Cook the ground beef

    Add the 240 g of ground beef and break it up with the spoon. Cook for 5 minutes until there's no pink left at all.

    Tip · Make sure the meat is gray all over, with no pink, before adding the tomatoes.
  5. Add the spices and tomatoes

    Add 1 tsp of cumin, 1/2 tsp of paprika, the salt and the pepper, then stir for 30 seconds. Pour in the 320 g of crushed tomatoes.

  6. Simmer the chili

    Add the kidney beans and corn. Cover and let it simmer over low heat for 10 minutes, stirring now and then, until the sauce thickens.

    Tip · If the chili sticks to the bottom, add a little splash of water and scrape with the spoon.
  7. Let the rice rest

    The rice has been done for a bit: keep it covered, off the heat, then fluff it with a fork right before serving.

  8. Serve

    Taste the chili and adjust the salt and pepper. Split the rice between two plates and spoon the chili over the top.
