  1. Preheat the oven

Turn the oven on to 200 °C (gas mark 6-7) so it's nice and hot when you're ready to bake.

  2. Peel the potatoes

Wash the potatoes, peel them and cut them into cubes of about 2 cm.

  3. Cook the potatoes

Put the potato cubes in a saucepan of cold salted water. Bring to a boil, then let them cook for 15 min over medium heat.

Tip · To check if the potatoes are done, poke them with a fork: it should slide in easily.
  4. Cook the green beans

Take the frozen green beans out of the freezer and tip them straight into a saucepan of boiling salted water.

  5. Cook the salmon

In a hot, dry nonstick skillet, set the salmon fillets skin side down. Let them cook for 4 min without touching, then flip them gently.

Tip · If the salmon sticks to the skillet, don't force it when flipping, just wait another 30 seconds.
  6. Season the salmon

Drizzle the salmon fillets with the juice of half a lemon and season lightly with salt and pepper. Keep warm.

  7. Drain the veggies

Drain the potatoes and green beans in a colander. Add a drizzle of olive oil and toss to coat them.

  8. Bake the potatoes

Spread the potato cubes on a baking sheet. Bake at 200 °C for 10 min to brown them lightly.

  9. Serve

Divide the potatoes and green beans among the plates, set the salmon on top and drizzle with the rest of the lemon juice.
