Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 200 °C (gas mark 6-7). Let it heat while you prep the rest.

  2. Peel the potatoes

Peel the potatoes and cut them into cubes of about 2 cm. Put them in a bowl of cold water so they don't turn dark.

  3. Cut the carrots

Peel the carrots and cut them into thick 1 cm rounds. Set them aside with the potatoes.

  4. Dry the fish

Take the pollock fillets out of the freezer and let them thaw for 5 min at room temperature. Pat them dry with paper towels to remove excess water.

  5. Season the fish

Place the pollock fillets on a baking sheet lined with parchment paper. Drizzle them with the juice of half a lemon and season lightly with salt and pepper.

Tip · To keep the fish from sticking to the sheet, lightly oil the parchment paper before laying down the fillets.
  6. Cook the vegetables

Drain the potatoes and carrots. Heat the oil in the nonstick skillet over medium heat. Add the vegetables and season with salt and pepper. Cook for 5 min, stirring.

Tip · If the vegetables aren't tender enough after 5 min, cook them 2-3 min longer over low heat.
  7. Bake everything

Arrange the vegetables around the fish on the baking sheet. Bake for 20 min at 200 °C. The fish should be opaque and flake easily.

  8. Serve hot

Take the baking sheet out of the oven. Drizzle the fish with the rest of the lemon juice. Serve right away.
