  1. Peel the vegetables

Peel the carrots and dice them small. Peel the onion and slice it thinly.

  2. Cook the bacon

In the skillet over medium heat, cook the lardons with no added fat until lightly golden.

  3. Add the onion and carrots

Add the onion and carrots to the skillet with the lardons. Cook for 3 min, stirring.

  4. Add the broth

Add the split peas to the saucepan, add the crumbled bouillon cube and cover with hot water up to 2 cm above the peas. Bring to a boil.

Tip · For a creamier soup, mash a few split peas with the spoon at the end of cooking.
  5. Cook the soup

Lower the heat to keep a gentle boil. Cook for 40 min, stirring now and then. If the soup gets too thick, add a little hot water.

  6. Combine vegetables and peas

Once the peas are tender, add everything from the skillet (lardons, onion, carrots) to the saucepan. Let it heat through for 2 min.

Tip · To keep the lardons from sticking to the bottom, stir the skillet well right from the start.
  7. Season and serve

Taste and adjust the seasoning with a pinch of salt and pepper. Serve hot with a drizzle of olive oil if you like.

And there you go, it's readyCheck off every step to celebrate.
