Step-by-step recipe

  1. Heat the oil

Fill the deep fryer or large pot with about 5 cm of oil. Heat over medium heat until a piece of potato sizzles right away (about 160 °C to 170 °C).

Tip · To check the oil temperature, drop in a small piece of potato: if it rises to the surface and sizzles, the oil is ready.
  2. Peel the potatoes

Peel the potatoes and cut them into sticks 1 cm thick. Rinse them under cold water to remove the starch, then dry them with a clean dish towel.

  3. Fry the potatoes

Drop the potato sticks into the hot oil. Fry them 8 to 10 min until golden and crispy. Drain on paper towels and salt lightly.

Tip · Don't overload the fryer or the fries won't get crispy. Fry them in two batches if needed.
  4. Make the breading

In a bowl, beat the egg with a pinch of salt and pepper. On a plate, mix the breadcrumbs with the remaining flour and a pinch of salt.

  5. Bread the fish

Pat the fish fillets dry with paper towels. Dip them in the beaten egg, then roll them in the breadcrumb and flour mix to coat them well.

  6. Fry the fish

Heat the rest of the oil in the nonstick skillet over medium heat. Add the breaded fillets and cook 3 to 4 min per side until golden and cooked through.

  7. Serve hot

Arrange the fish fillets on a plate with the fries. Season lightly with salt and pepper if needed.
