Step-by-step recipe check off as you go

  1. Sauté the squash and spinach

Cut the peeled butternut squash into small 1.5 cm cubes. In the sauté pan with the oil, cook them for 12 minutes covered with the onion and garlic. Add the spinach and let it wilt for 3 minutes.

  2. Make the ricotta cream

In a mixing bowl, whisk the ricotta with the heavy cream, milk, half the grated cheese, nutmeg, salt and pepper.

Popotam's tipThe mixture should be fairly pourable: it hydrates and bakes the lasagna noodles in the oven.
  3. Assemble the lasagna

Preheat the oven to 190 °C (375 °F). In the baking dish, layer: a thin layer of ricotta cream, 3 lasagna sheets, half the squash-spinach mixture, and repeat for 3 tiers. Finish with the remaining cream and grated cheese.

  4. Bake for 35 minutes

Bake for 35 minutes at 190 °C (375 °F) until the top is bubbling and nicely golden.

And there you go, it's ready

Secrets to tender lasagna without precooking the noodles what makes all the difference

Secrets

  • Small 1.5 cm squash cubes so they turn meltingly tender in 15 minutes in the pan.
  • Always cover the edges of the lasagna sheets completely with sauce so they do not dry out.
  • A brief rest outside the oven so the layers hold their shape when sliced.

Storage and make-ahead

It keeps for 3 days in the fridge and freezes perfectly in individual portions.

Variations

  • Sprinkle with a few chopped sage leaves and crushed hazelnuts.
  • Top with slices of goat cheese before baking.
  • Swap the spinach for sautéed cremini mushrooms.

Frequently asked questions
