Five minutes of prep, then the oven does all the work: the squash caramelizes around the edges beneath salty feta and walnuts.
When you only have ten minutes on a weeknight, oven-roasted butternut squash is unbeatable: cut into half-moons, its thin skin is even edible once nicely golden.
Fresh out of the oven, the contrast between the piping-hot honeyed squash, crumbled fresh feta, and toasted walnuts makes a complete dinner.

Preheat the oven to 200 °C (400 °F). Wash the butternut squash, halve it lengthwise, scoop out the seeds, and cut it into 1.5 cm slices (peeled, or with the skin thoroughly scrubbed).
Arrange the slices in a single layer on the baking sheet lined with parchment paper. Drizzle with olive oil and honey, season with salt and pepper, and scatter with thyme.
Bake for 30 minutes at 200 °C (400 °F). In the last 5 minutes, scatter the walnut halves across the sheet so they toast without burning.
As soon as it comes out of the oven, generously crumble the feta over the piping-hot squash and serve right away.
