Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 200 °C (gas mark 6-7) so it's nice and hot when the chicken goes in.

  2. Peel the vegetables

Peel the potatoes and carrots, then cut them into same-size pieces (about 2 cm) so they cook evenly. Thinly slice the onion.

  3. Cook the onion

Heat the oil in the nonstick skillet over medium heat. Add the sliced onion and cook for 2 min without letting it brown.

Tip · If the onion starts browning too fast, lower the heat and add 1 tbsp of water so it doesn't burn.
  4. Cook the vegetables

Add the potatoes and carrots to the skillet with the onion. Mix well and season lightly with salt and pepper. Cook for 5 min over medium heat, stirring now and then.

  5. Season the chicken

Take the chicken thighs out of the fridge. Season each thigh with salt and pepper on all sides.

  6. Brown the chicken

In the same skillet, place the chicken thighs skin side down. Let them brown for 3 min over medium heat without moving them, for a nice crust.

  7. Bake everything

Transfer the vegetables to a baking dish. Set the chicken thighs on top. Bake at 200 °C for 25 min.

Tip · To keep the potatoes from sticking, gently turn them in the skillet before moving them to the dish.
  8. Check for doneness

When it comes out of the oven, poke a thigh with a knife: the juices should run clear. If not, bake 5 min longer at 180 °C.
