Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 200 °C (gas mark 6-7).

  2. Peel the sweet potato

Peel the sweet potato and cut it into 1 cm thick sticks.

  3. Cook the fries

Bring a saucepan of salted water to a boil. Blanch the sticks for 5 min, then drain them. Spread them on a baking sheet with a drizzle of olive oil and season with salt and pepper. Bake for 25 min, flipping halfway through.

Tip · For crispy fries, don't crowd them on the baking sheet and flip them well halfway through.
  4. Start the beef filling

Finely chop the red onion. Heat a drizzle of oil in the skillet and cook the onion for 3 min over medium heat.

  5. Cook the ground beef

Add the ground beef to the skillet with the onion. Cook for 8 min over medium heat, breaking up the meat with the fork. Season with salt and pepper and add the paprika.

  6. Add the tomato sauce

Stir the tomato sauce into the skillet with the beef. Mix well and let it simmer for 2 min.

  7. Warm the tortillas

Quickly warm the tortillas in the hot skillet for 30 seconds to soften them.

Tip · If your tortillas are too dry, mist them lightly with water before warming them in the skillet.
  8. Build the tacos

Spread the beef in tomato sauce over the tortillas. Sprinkle with half the shredded cheese. Fold each tortilla into a half-moon.

  9. Melt the cheese

Set the tacos on a baking sheet or in a baking dish. Top them with the rest of the shredded cheese. Slide them under the broiler for 2-3 min, until the cheese is fully melted.
