Soft pear and chocolate cake

An intense dark chocolate center and tender pears that melt as you slice. The cake everyone asks for at afternoon snack time.

VegetarianWith the kids

Pear and dark chocolate are an unbeatable duo in October and November. By setting the pear halves right into the batter, they bake gently in the chocolate and keep all their juices.

No need for a mixer: a mixing bowl, a whisk, and the cake is in the oven in fifteen minutes.

still warm, melty chocolate

Step-by-step recipe check off as you go

  1. Melt the chocolate

Preheat the oven to 180 °C (350 °F) and butter the pan. Melt the chopped dark chocolate and butter over very low heat, then stir smooth with a spoon.

  2. Whisk the batter

In the mixing bowl, whisk the eggs and sugar for 2 minutes until frothy. Pour in the melted chocolate, then fold in the flour and baking powder.

  3. Prep the pears

Score the rounded side of each peeled and cored pear half into thin slices without cutting all the way through: they will fan out as they bake.

Popotam's tipPears that are still slightly firm hold their shape better and won't release too much liquid.
  4. Bake to a soft center

Pour the batter into the pan, place the pear halves rounded side up, pressing them in gently, and bake for 35 minutes at 180 °C (350 °F).

And there you go, it's ready

Secrets for a perfectly tender cake what makes all the difference

Secrets

  • Dark chocolate with 65% or 70% cocoa to balance the natural sweetness of the pears.
  • Score the back of the pear halves: the heat penetrates right to the center and they look gorgeous.
  • Stop baking as soon as a knife inserted in the center comes out with a few moist crumbs.

Storage and make-ahead

It keeps for 3 days under a cake dome at room temperature. Ten seconds in the microwave per slice revives the melty chocolate.

Variations

  • Swap 40 g flour for 40 g hazelnut flour.
  • Scatter sliced almonds over the top before baking for extra crunch.
  • With diced apples and a pinch of cinnamon instead of pears.
