  1. Peel the potatoes

Peel the potatoes and cut them into small cubes of about 1 cm. Give them a quick rinse to remove the starch.

  2. Cook the onion

Dice the onion small. In the nonstick skillet, heat the olive oil over medium heat. Add the onion and cook for 3 min without browning.

  3. Cook the potatoes

Add the potatoes to the skillet with the onion. Salt lightly, mix well and cook over medium-low heat for 10 min, stirring now and then, until tender but not browned.

Tip · For really tender potatoes, cover the skillet with a lid for the first 5 minutes of cooking. It speeds things up without needing more water.
  4. Add the spinach

Wash the spinach, drain it well and chop it roughly. Add it to the skillet with the potatoes and onion. Cook for 2 min over high heat, stirring, until the spinach wilts.

  5. Beat the eggs

In the bowl, beat the eggs with a pinch of salt and pepper. The texture should be smooth but not foamy.

  6. Cook the omelet

Spread the beaten eggs over the vegetables in the skillet. Cook over low heat for 3 min without touching, until the edges start to set. Then, using the fork, fold the omelet in half while sliding it onto a plate.

Tip · If the omelet is hard to flip, slide a flat plate over the skillet and flip it in one quick move. That way nothing breaks.
  7. Finish cooking

Slide the omelet back into the skillet, folded side down, and cook for 1 min more over very low heat to finish setting.

And there you go, it's readyCheck off every step to celebrate.

Pantry salt, oil and spices aren't counted. Your store and your brands will move the total, but the ballpark is right.

How long does it keep?

Eat it fresh. An omelet is best soft, fresh out of the pan: reheated, it turns rubbery. Make it the day you eat it, it's done in 5 minutes!
