Step-by-step recipe

check things off as you go
  1. Preheat the oven

Turn the oven on to 200 °C (gas mark 6-7) so it's nice and hot when the dish goes in.

Tip · For even heat, set the dish on the middle rack. Avoid opening the oven while it bakes so you don't lose heat.
  2. Prep the vegetables

Peel the potatoes and carrots, then cut them into same-size pieces (about 2 cm) so they cook evenly. Put them in a bowl.

  3. Season the chicken

Season the chicken thighs lightly with salt and pepper on both sides. Add half the thyme and a drizzle of oil to coat them.

  4. Fill the dish

Place the chicken thighs in the center of the baking dish. Spread the potatoes and carrots around them, without crowding. Drizzle everything with the rest of the oil and sprinkle with the rest of the thyme.

  5. Bake

Slide the dish into the preheated oven and bake for 35 minutes. Turn the chicken thighs halfway through so they brown nicely.

Tip · If you want crispier chicken, put it under the broiler for 2 minutes at the end, keeping a close eye on it so it doesn't burn.
  6. Check for doneness

Poke the potatoes and carrots with the tip of a knife: they should be tender. If not, bake 5 to 10 minutes longer.

And there you go, it's readyCheck off every step to celebrate.
