Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 180 °C (gas mark 6). Let it heat for 10 minutes.

  2. Roll out the dough

Unroll the pie dough and lay it in a pie pan. Prick the bottom with a fork so it doesn't puff up.

  3. Cook the bacon

In a nonstick skillet, cook the lardons over medium heat without adding any fat. Stir regularly for 5 minutes until golden.

Tip · If the lardons release too much fat, lift them out with a slotted spoon and save the fat for other recipes. They should just be golden, not burnt.
  4. Make the quiche filling

In a bowl, beat the eggs with the crème fraîche. Add a pinch of salt and pepper. Mix well.

  5. Fill the tart

Spread the drained lardons over the crust. Add the quiche filling on top, making sure it covers the lardons well.

  6. Bake the quiche

Put the tart in the oven, preheated to 180 °C. Bake for 25 minutes, until the top is golden and the center is set.

Tip · To check if the quiche is done, stick a knife in the center: it should come out clean.
  7. Prep the salad

Wash the lettuce in cold water. Gently dry it in your hands or with a clean dish towel to remove excess water.

  8. Dress the salad

In a bowl, mix the olive oil and vinegar. Add a pinch of salt and pepper. Drizzle this over the salad and toss well.

  9. Serve

Take the quiche out of the oven. Let it cool for 2 minutes before serving with the dressed green salad.
