  1. Preheat the oven

Turn the oven on to 180 °C (gas mark 6).

  2. Prep the leeks

Wash the leeks under cold water. Trim off the green tops and the tough root end. Slice them thinly into rounds.

  3. Cook the leeks

Heat the oil in the nonstick skillet over medium heat. Add the leeks and cook for 5 min, stirring, until tender but not browned.

Tip · If the leeks stick, add a tablespoon of hot water to the skillet and scrape the bottom with a wooden spatula.
  4. Make the filling

In the mixing bowl, beat the eggs with the crème fraîche. Season lightly with salt and pepper. Add half the grated Emmental (20 g) and mix.

  5. Roll out the dough

Take the pie dough out of the fridge. Roll it out on a floured surface with the rolling pin. Line the tart pan with it, pressing it well into the edges.

  6. Fill the tart

Spread the drained leeks over the crust. Add the egg filling on top. Sprinkle with the rest of the Emmental (20 g).

  7. Bake the tart

Put the tart in the oven, preheated to 180 °C. Bake for 20 min, until the crust is golden and the filling is set.

Tip · To check if it's done, stick a knife in the center: it should come out clean.
