  1. Peel the potatoes

Peel the potatoes under running water so they don't turn dark. Cut them into cubes of about 2 cm, and don't rinse them afterward: the starch helps them cook.

  2. Boil the potatoes

Put the potato cubes in the saucepan with cold unsalted water. Bring to a boil, then lower the heat and simmer gently for 15 min. Drain before setting aside.

Tip · If the potatoes aren't tender enough after 15 min, cook them 2-3 min longer but no more, or they'll fall apart.
  3. Slice the onion

While the potatoes cook, peel the onion and cut it into thin slices. Set it aside.

  4. Brown the sausages

Place the sausages in the skillet over medium heat with no added fat. Let them brown for 5 min, turning them often so they color nicely. Take them out and cut them into thick rounds.

  5. Cook the onion

In the same skillet, add the olive oil and cook the onion slices over medium heat for 3 min until translucent.

  6. Add the potatoes and sausages

Put the sausage rounds and drained potatoes back in the skillet. Mix well and cook for 5 min over low heat so the flavors blend.

Tip · For a crispy touch, lightly crush a few potato cubes with the wooden spoon before putting them back in the skillet.
  7. Season and serve

Season with salt and pepper to taste. Cook for 2 more min if needed so the salt soaks in. Serve hot.
