  1. Thaw the spinach

Put the frozen spinach in the saucepan without adding water. Thaw it over medium heat, stirring with the wooden spoon, for 3 to 4 minutes, until nice and tender.

  2. Drain the spinach

Take the saucepan off the heat and drain the spinach, pressing lightly to remove the extra water. Set it aside in a bowl.

  3. Beat the eggs

In a bowl, beat the 6 eggs with a pinch of salt and pepper. Whisk until smooth and a little frothy.

Tip · For a really fluffy omelette, beat the eggs hard until the mixture turns slightly pale.
  4. Warm up the spinach

Set the nonstick skillet over medium heat with the oil. Add the drained spinach and cook for 2 minutes, stirring, to warm it through and bring out the flavor.

Tip · If the spinach releases too much water, take it out of the skillet and squeeze it again before cooking it.
  5. Add the eggs over the spinach

Spread the spinach out evenly in the skillet. Add the beaten eggs evenly over the top. Cook over low heat without touching for 3 to 4 minutes, until the edges start to set.

  6. Fold the omelette

When the top of the omelette is still a little runny, fold it in half with the wooden spoon. Cook 1 more minute to finish.

  7. Prep the salad

Wash the lettuce under cold water. Dry it well by pressing it between your hands or in a clean dish towel to remove the extra water.

  8. Serve the omelette

Serve the omelette on a plate with the lettuce on the side. You can cut it into two portions if you like.

And there you go, it's readyCheck off every step to celebrate.

Pantry salt, oil and spices aren't counted. Your store and your brands will move the total, but the ballpark is right.

How long does it keep?

Eat it fresh. An omelet is best soft, fresh out of the pan: reheated, it turns rubbery. Make it the day you eat it, it's done in 5 minutes!
