Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 200 °C, convection if you have it.

  2. Peel and cut the potatoes

Peel the 530 g of potatoes and cut them into cubes of about 2 cm so they cook fast.

  3. Cook the potatoes

Drop the cubes into a saucepan of cold water with the pinch of salt, bring to a boil, then let them simmer until a knife goes through easily. Drain them well.

Tip · Start with cold water so the cubes cook evenly, and take them out as soon as they're tender, otherwise they fall apart when you mix them.
  4. Slice the onion

While the potatoes cook, peel the onion and slice it thinly.

  5. Sauté the onion and bacon

Melt the 10 g of butter in the skillet over medium heat, add the onion for 3 minutes, then the 110 g of smoked diced bacon for 5 minutes until golden.

  6. Mix the filling

Off the heat, add the drained potatoes to the skillet with the 8 cl of thick crème fraîche and the pinch of pepper. Stir gently without mashing.

Tip · Drain the potatoes really well and let them steam for 1 minute in the colander, otherwise the water thins out the cream and the gratin ends up runny. Serve with a green salad.
  7. Build the gratin

Pour half the mix into the dish, cover with half the sliced raclette cheese, add the rest of the mix, then the rest of the cheese.

  8. Bake until golden

Bake at 200 °C until the cheese is melted and nicely golden on top.

And there you go, it's readyCheck off every step to celebrate.
