  1. Prep the vegetables

    Peel the sweet potato and cut it into 2 cm cubes (300 g). Peel and slice the onion, then crush and chop the 2 garlic cloves.

  2. Rinse the lentils

    Put the 160 g of red lentils in the colander and rinse under cold water until it runs almost clear. Drain well.

  3. Sauté the onion

    Heat 1 tbsp of olive oil in the saucepan over medium heat. Add the onion with 1 pinch of salt and sauté, stirring, until translucent.

  4. Add the garlic and curry powder

    Add the garlic and 1 tsp of curry powder to the saucepan. Stir for 30 seconds to bring out the flavors, without letting it burn.

  5. Add the liquids and combine

    Add the sweet potato cubes and lentils to the saucepan, then add the 20 cl of coconut milk and about 50 cl of water. Stir and bring to a simmer.

    Tip · If the dal sticks to the bottom, add a small glass of hot water rather than cold, and stir while scraping the bottom.
  6. Cook the dal

    Turn the heat down to low, cover and let it cook, stirring now and then. If it gets too thick, add a little water. The sweet potato should be tender and the lentils mashed down.

    Tip · Stir often toward the end, since red lentils fall apart and stick easily to the bottom of the saucepan.
  7. Adjust and serve

    Taste, then add the pepper and some salt if needed. Stir well and let it rest off the heat for 2 minutes before serving.
