Step-by-step recipe

  1. Peel the potatoes

Peel the potatoes and cut them into small 1 cm dice. Rinse them in cold water to wash off the starch.

  2. Cook the potatoes

In the saucepan, heat 1 tsp of olive oil over medium heat. Add the diced potatoes and cook for 15 min, stirring now and then, until tender but not browned. Salt lightly.

  3. Slice the onion

While the potatoes cook, peel and finely slice the onion. Set aside.

Tip · To keep the onion from burning, turn down the heat if needed while it cooks.
  4. Cook the onion

In the nonstick skillet, melt the butter over medium heat. Add the sliced onion and cook for 5 min until translucent, without browning.

  5. Mix the potatoes and onion

Add the cooked potatoes to the skillet with the onion. Stir well and let it heat for 2 min over low heat so everything comes together.

  6. Beat the eggs

In the bowl, beat the eggs with a fork. Season generously with salt and pepper. Add half the shredded cheese (30 g) and stir.

  7. Add the eggs to the potatoes

Tip the beaten eggs over the potatoes and onion in the skillet. Spread them out with the fork so they're evenly distributed.

Tip · For a softer omelette, cover the skillet with a lid for the last 2 minutes of cooking.
  8. Cook the omelette

Cook the omelette over medium-low heat for 5 min, until the bottom is golden and the top is almost set. Sprinkle with the rest of the cheese (30 g).

  9. Fold and serve

With a spatula, fold the omelette in half. Cook for 1 more min to melt the cheese, then serve right away.

Eat it fresh. An omelet is best soft, fresh out of the pan: reheated, it turns rubbery. Make it the day you eat it, it's done in 5 minutes!
