Christmas surprise bread (pain surprise)

A big round loaf hiding 48 little ham, salmon and cucumber sandwiches: lift the lid and let everyone help themselves.

No ovenWith the kids

The pain surprise is the French appetizer for big gatherings: from the outside, a handsome country loaf; lift its lid and it's packed with little sandwiches fitted together like a puzzle, three fillings in layers. Kids love uncovering it, grown-ups keep going back.

It all comes down to the cutting: getting the crumb out in one piece without piercing the crust, then slicing it into even rounds. Day-old bread and a spell in the freezer make it much easier than it looks.

Good to know · Smoked salmon and cream cheese: keep the bread in the fridge until serving and don't leave it on the table for more than 2 hours. Smoked salmon is not advised during pregnancy (listeria risk): save the ham layer for pregnant guests.

Step-by-step recipe check things off as you go

  1. The lid

Set the loaf on the board. With the bread knife, slice off the top of the dome in one even cut, about 2 cm below the top: that's the lid. Set it aside.

  2. Free the crumb around the edge

Push the long thin knife straight down, 1 cm from the crust, to 1 cm from the bottom without piercing it. Work all the way round the loaf with a gentle sawing motion, keeping the blade upright.

Popotam's tip · Measure the depth by holding the knife against the outside of the loaf before you start, and pinch the blade between two fingers at the right height: you'll know exactly where to stop.
  3. Release the cylinder

On the side of the loaf, 1 cm above the bottom, make a small 2 cm slit in the crust. Slide the knife in through it and sweep right then left, pivoting, to free the bottom of the crumb without widening the opening. Gently turn the loaf over: the cylinder of crumb comes out in one piece.

Popotam's tip · If it resists, run the blade around the edge cut again: that's nearly always where it catches.
  4. Firm up and slice

Wrap the cylinder in cling film and put it in the freezer for 30 minutes. Then cut it horizontally into 6 even rounds, about 1.2 cm thick, with the bread knife. Lay them out in order on the board. Wrap the empty loaf in cling film so it doesn't dry out.

Popotam's tip · Keep the rounds in order: the cylinder will fit back perfectly into the crust.
  5. The fillings

Slice the cucumber very thinly, salt it and leave it in the colander for 10 minutes, then pat dry with paper towels. Meanwhile, mix 100 g of cream cheese with the lemon zest and juice, and the other 100 g with the snipped chives and a grind of pepper. Chop the dill.

Popotam's tip · Cucumber that hasn't been salted and drained will make the bread soggy in under an hour.
  6. Build the three layers

Rounds 1 and 2: butter on the inside faces, ham, gherkins. Rounds 3 and 4: lemon cream cheese on both, salmon, dill. Rounds 5 and 6: chive cream cheese on both, cucumber slices laid flat. Spread right to the edges, close each sandwich and press gently with the flat of your hand.

  7. Cut into bites

Cut each round sandwich into 8 wedges, like a cake, then cut each wedge in two across: a small triangle in the middle, a rounded piece at the edge. That gives 16 bites per layer, 48 in all.

Popotam's tip · Keep each layer together on the board as you cut, so it goes back in one move.
  8. Rebuild the loaf

Stack the layers back into the crust, in order, each bite in its place: the cylinder comes back together. Put the lid on top.

  9. Chill

Wrap the whole loaf in cling film and keep it in the fridge for at least 1 hour, and up to 6 hours. Bring it out at serving time and lift the lid in front of everyone.

And there you go, it's ready

Check off every step to celebrate.

The secrets to getting it right what makes all the difference

The secrets

  • A day-old loaf with a close crumb: fresh crumb full of holes tears instead of slicing.
  • The spell in the freezer before cutting: 30 minutes is enough for clean, even rounds.
  • Dry fillings spread right to the edges: that's what holds the bites together without soaking the bread.

Storing and making ahead

Assemble it on the day, no more than 6 hours ahead: beyond that, the crust softens. Keep it wrapped in the fridge until serving. Leftovers keep for 24 hours in the fridge, well wrapped. It doesn't freeze once filled (cream cheese and cucumber release water).

Variations

  • All vegetarian: tapenade and sun-dried tomatoes, hummus and grated carrot, cream cheese and roasted pepper.
  • French classics: tuna rillettes with cream cheese and lemon, or dry sausage with gherkin butter.
  • With a round rye loaf, denser and more flavourful, which slices even more easily.

The questions you're asking

Which bread is best for a pain surprise?

A large round loaf with a close crumb, a day old: country bread, rye or a round sandwich loaf. Many French bakers also sell a "pain surprise" to order, sometimes already hollowed out: ask a few days before the holidays.

How far ahead can you make a pain surprise?

In the morning for the evening, no more than 6 hours ahead, well wrapped in the fridge. Made the day before, the crust softens and the bread goes soggy.

How do you get the crumb out without piercing the loaf?

Cut around the edge 1 cm from the crust, stopping 1 cm from the bottom, then free the bottom through a small slit in the side, pivoting the blade. A long, flexible knife makes it much easier.

How many people does a pain surprise serve?

A loaf of about 1 kg gives 48 bites, so 4 to 5 each for 10 people as a pre-dinner nibble, alongside other appetizers.
