  1. Preheat the oven

    Turn the oven on to 200 °C, convection if you can.

  2. Cook the potatoes

    Peel the 600 g of potatoes, cut them into 2 cm cubes and put them in a saucepan of cold water with the pinch of salt. Bring to a boil and cook for 12 to 15 min at a gentle simmer, until a knife goes through them easily, then drain.

    Tip · Don't let the potatoes boil hard, otherwise they fall apart and the tartiflette turns into mash. Drain them well so they don't water down the cream.
  3. Slice the onion

    Peel the onion and cut it into thin slices.

  4. Brown the lardons

    Cook the 150 g of smoked lardons in the skillet with no added fat over medium-high heat until golden. Lift them out of the skillet with a wooden spoon, leaving the fat behind.

  5. Cook the onion

    In the fat from the lardons, sweat the onion over medium heat until translucent. Add the 5 cl of white wine and let it cook off completely.

  6. Combine everything

    Add the potatoes and lardons to the skillet, then the 10 cl of thick crème fraîche and the pepper. Stir for 2 min over low heat, then tip it all into the baking dish.

  7. Top with the reblochon

    Slice the half reblochon in two horizontally, then lay both halves rind side up on the potatoes.

    Tip · Serve with a crunchy green salad to lighten the meal. Reblochon is easier to cut with a wet knife.
  8. Bake until golden

    Bake at 200 °C until the cheese is melted and nicely browned on top.
