Step-by-step recipe

  1. Preheat the oven

    Turn the oven on to 180°C (thermostat 6).

  2. Peel the vegetables

    Peel the potatoes and zucchini. Cut them into thin rounds, 3 to 4 mm thick.

  3. Cook the potatoes

    Drop the potato slices into a saucepan of salted boiling water. Cook for 10 min over medium heat. Drain and set aside.

    Tip · To check if the potatoes are done, poke them with a fork: it should slide in easily.
  4. Sauté the zucchini

    In a nonstick skillet with the olive oil, sauté the zucchini rounds over medium heat for 5 min. Season lightly with salt and pepper. Set aside.

  5. Make the cream

    In a bowl, mix the crème fraîche with the milk, nutmeg, salt and pepper. Taste and adjust the seasoning.

  6. Assemble the gratin

    In the baking dish, alternate a layer of potatoes and a layer of zucchini, adding a bit of the cream mixture each time. Repeat until you've used everything up. Finish with a layer of cream.

    Tip · For a crispier gratin, slide it under the broiler for 2 to 3 min at the end.
  7. Add the cheese

    Scatter the shredded cheese evenly over the top of the gratin. Keep half for the end.

  8. Bake

    Bake the gratin at 180°C for 25 min. Halfway through, add the rest of the shredded cheese on top.

  9. Serve hot

    Take the gratin out of the oven and let it rest for 2 min before serving.
