Step-by-step recipe

  1. Preheat the oven

    Turn the oven on to 200 °C from the start, it'll be hot when you need it.

  2. Peel and cut

    Peel the 280 g of potatoes and cut them into 5 mm slices. Peel the 2 onions and slice them thinly.

  3. Brown the potatoes

    Heat the olive oil in the skillet over medium heat and add the potatoes. Sauté them, flipping now and then, until golden and tender when poked with the tip of a knife.

    Tip · Don't cover or crowd the skillet. Spread the slices in a thin layer, otherwise they'll steam instead of browning.
  4. Add the onions and bacon

    Add the onions and the 70 g of smoked diced bacon to the skillet. Keep going over medium heat, stirring, until the onions are soft and the bacon is golden.

  5. Season and bind

    Turn off the heat, add the 4 cl of crème fraîche, some pepper and very little salt since the bacon and reblochon are already salty. Stir well.

  6. Prep the reblochon

    Cut the reblochon in half horizontally, then cut each half into big chunks.

  7. Build the gratin

    Pour half the mix into the dish, add half the reblochon, then the rest of the mix and finally the rest of the reblochon, rind side up.

  8. Bake the gratin

    Bake at 200 °C until the cheese is melted and nicely golden. Let it rest for 2 minutes before serving.

    Tip · If the top browns too fast before the cheese melts, lower the oven to 180 °C. Serve with a green salad.
