Step-by-step recipe

check things off as you go
  1. Peel and slice the onions

Peel the 2 onions, cut them in half, then slice them thin.

  2. Prep the sweet potatoes

Peel the 400 g of sweet potato and cut it into roughly 2 cm cubes so they cook fast and at the same speed.

Tip · Cut the cubes the same size, or the small pieces fall apart into mush while the big ones are still hard.
  3. Drain the chickpeas

Open the 2 cans, pour the chickpeas into the colander and rinse them under cold water. You should have 240 g.

  4. Cook the onions

Heat the 2 tbsp of olive oil over medium heat in the saucepan, then add the onions with a pinch of salt. Stir often until they turn translucent.

  5. Toast the curry

Add the 2 tsp of mild curry powder and stir for 1 minute so it releases its aroma, without letting it burn.

  6. Add the sweet potatoes and liquid

Add the sweet potato cubes, chickpeas, coconut milk and a big glass of water. Season with salt and pepper and stir well.

  7. Let the curry simmer

Bring to a simmer, cover and cook over low heat, stirring now and then, until the tip of a knife slides into the sweet potato with no resistance.

Tip · If the sauce sticks to the bottom, add a small glass of water and turn the heat down. Serve the curry with bread if you have some at home.
  8. Adjust and serve

Taste and adjust the salt and pepper. If the sauce is too runny, let it reduce for 2 minutes uncovered.

And there you go, it's readyCheck off every step to celebrate.
