  1. Prep the veggies

    Peel and slice the onion. Wash the zucchini and cut them into 1 cm half-moons.

  2. Cut the chicken

    Cut the 300 g of chicken breasts into 2 cm cubes. Season them with salt and pepper.

  3. Start the rice

    Rinse the 150 g of basmati rice in the colander. Put it in the saucepan with 300 ml of salted water and bring to a boil.

  4. Cook the rice

    Cover, turn the heat down very low and cook for 12 min. Turn off the heat and let it puff up, covered, without lifting the lid.

  5. Sear the chicken

    Heat the olive oil in the skillet over medium-high heat. Brown the chicken cubes for 6 min, stirring.

    Tip · Don't crowd the skillet or stir too soon, otherwise the chicken boils instead of browning. Let it brown for 2 min before flipping.
  6. Add the onion and zucchini

    Add the onion and cook for 2 min, then add the zucchini. Season with salt and pepper and cook for 8 min over medium heat, stirring often.

    Tip · If the zucchini sticks or dries out, add a small splash of water to scrape up the browned bits and make them tender.
  7. Check it's cooked

    Cut open a chicken cube: it should be white all the way through, no pink, with clear juices. If not, cook 2 more min.

  8. Fluff and serve

    Fluff the rice with a fork. Serve it right away with the chicken and zucchini on top.
