Step-by-step recipe

  1. Peel the squash

    Cut the butternut squash in half lengthwise and scoop out the seeds with a spoon. Peel it, then cut it into 2 cm cubes.

  2. Sauté the onion

    Finely slice the onion and sauté it in the skillet with the olive oil over medium heat for 3 min without browning.

  3. Add the garlic and lentils

    Crush the garlic clove and add it to the onion with the red lentils. Stir well and sauté for 1 min.

  4. Add water to the lentils

    Add 50 cl of water to the saucepan with the lentils and onion, bring to a boil, then lower the heat. Let it cook for 15 min over low heat, stirring now and then.

    Tip · If the lentils aren't tender enough after 15 min, cook them 5 min more at most without mashing them.
  5. Cook the squash

    Drop the squash cubes into a saucepan of salted boiling water and cook for 8 min. Then drain them.

  6. Mix everything

    In the baking dish, mix the drained lentils, cooked squash, crème fraîche, half the shredded cheese, nutmeg, salt and pepper.

  7. Top with cheese

    Sprinkle the rest of the shredded cheese over the top of the gratin.

  8. Bake the gratin

    Preheat the oven to 180°C (thermostat 6). Bake for 20 min until the top is nicely browned.

    Tip · For a crispier gratin, slide it under the broiler for 2 min at the end.
