    Turn the oven on to 180 °C. Take the roast out of the fridge, season it with salt and pepper, then rub it with the dried thyme (1/2 tsp).

    Heat the olive oil (1 tbsp) in the skillet over high heat and brown the roast on all sides.

  5. Prep the apples

    While the celery root cooks, peel the 2 apples, remove the seeds and cut them into wedges.

  6. Add the apples

    Pull the skillet out of the oven after 20 min, flip the roast, add the apples around it with 10 g of butter (half of the 20 g), then put it back in for the remaining 20 min.

  7. Mash

    Drain the celery root well, put it back in the saucepan and mash it with the remaining 10 g of butter and the crème fraîche (10 cl). Add pepper, and salt if needed.

  8. Rest and serve

    Take out the roast and cover it with foil for 5 min, then slice it. Serve with the mash and apples.
